Reserve Semillon
Wine
Fermoy Estate Reserve Semillon fruit is machine harvested in the cool of the night from the estate vineyard at Wilyabrup in Margaret River. The vines grow in rich, loamy soils.
The fruit is pressed directly to tank to settle. Fermentation occurs in new French oak barrels, providing structure and texture to the wine, followed by three months of maturation.
The wine is then siphoned across to seasoned oak barrels to age for a further six months on lees. It is blended in tank and stabilized prior to bottling. There is minimal fining and filtration.
Straw green, Fermoy Estate Reserve Semillon has vibrant citrus and tropical fruit flavours, sweet spices and precise cool climate acidity. Cellaring potential is five years.
